Quinoa, Chia and Berry Donut

You Can Eat 12 Of These Donuts

... and not feel guilty! These are gluten-free and loaded with superfood goodies like acai and chia seeds.

_ Quinoa, Chia and Berry Donut

Ingredients

Makes 12

 

3/4 cup quinoa flakes

¼ cup chia seeds

1 teaspoon Acai powder

1 cup mixed berry juice

1 tablespoon honey

½ cup double cream yoghurt

 

For the glaze:

½ cup sifted icing sugar

1-2 tablespoons mixed berry juice

 

Mix the quinoa flakes, chia seed, acai, mixed berry juice and honey in a bowl. Cover and place in the refrigerator until the chia seeds and quinoa have absorbed all the berry juice, roughly 1hr.

While the mixture soaks, preheat the oven to 180’c and spray a mini donut tray with non-stick spray.

Press the mixture into the donut holes and place in the oven for 12-15 minutes until the donuts puff slightly and they start to brown.

Remove from the oven and turn them out onto a wire rack to cool.

Once cooled, dip the donuts into the berry glaze and top with double cream yoghurt drizzled over the top. (I placed the yoghurt into a small piping bag or zip lock bag and cut a little hole on one corner)

 

To make the glaze combine the berry juice and icing sugar and whisk until smooth.
