A Childhood Classic Grows Up
Take a classic mac ‘n cheese, add Bolognese, turn it into a waffle and you'll be smiling from ear to ear. This recipe is perfect for lunchtime snacks or simply a cool idea to switch up your regular favourite comfort food.
Mac n Cheese Bolognese Waffles
500ml Milk, warmed
100g Mature cheddar cheese
50g Parmesan cheese
5 cups cooked macaroni
Left over Bolognaise
Cheese sauce for dipping
Melt the butter into a pot over a medium heat and add the flour whisking continuously. Slowly stream in the milk while whisking to prevent lumps. I find heating the milk works the best to prevent lumps from forming, it also makes the job of mixing easier. However, if you forget to heat the milk like I did in my video it will be fine – just whisk like crazy. Cook the mixture for 5 – 10 minutes mixing constantly with a wooden spoon or rubber spatula to prevent it from sticking and burning at the bottom.
Add the cheese at this point, season and stir to combine. Turn off the heat and add the macaroni to the sauce and stir until all the macaroni is coated. Spoon in as little or as much leftover Bolognese that you have and mix.
Preheat your waffle maker and spray generously with non-stick spray. Add 2-3 large spoonfuls of the macaroni and cheese, close the machine and cook until golden and a little crunchy on the outside, roughly 6 minutes depending on your machine.
Eat whole or cut into snack size fingers and dip into warm cheese sauce.
