LAMB ROAST WITH THE MOST

Who has leftovers and never knows what to do with them besides make a sandwich???? Which, don't get me wrong, is delicious but what about really and truly rethinking leftovers into a whole new meal that will take moments to make??!!

I used Knorr Mild Durban Curry to transform my lamb into a delicious saucy filling for my tacos. Add's the perfect amount of spice!

Serve with fresh chillis and lime wedges and enjoy! Seriously easy and so flippin tasty!

Leftover Lamb Roast Tacos
Ingredients
2 cups shredded leftover lamb roast
1 onion, sliced
1 packet Knorr Mild Durban Curry
1 lime, juice
¾ cup orange juice
1 cup water
2 avocados
1 tomato
¼ cucumber
1 small handful coriander
2 jalapeno chilli’s
4 limes for serving
8 corn tortillas (or simply use flour wraps and cut out smaller circles and then toast up the offcuts for crunchy bits inside the taco or nachos – don’t waste a bite)
Place the sliced onion in a pan heated to medium with a little oil. Fry until lightly browned and then add the contents of the Knorr packet, 1 cup water and ¾ cup orange juice. Add the shredded lamb roast to the pan and simmer for 5 - 10 minutes until reduced and thickened. Add the juice of 1 lime and remove from the heat.
Serve in toasted tortillas with mashed avo, salsa, coriander, fresh limes and chilli’s.
To make the salsa:
Finely chop the tomatoes, cucumber and chillies and mix. Add a squeeze of lime, salt and pepper and mix.
