Breakfast on the go

What’s great about this sort of recipe is that you can make a large batch and have breakfast sorted for the rest of the week – so there’s no need to work for your breakie every morning. The only ingredient I would recommend doing fresh each day is the blueberry blitz. So perhaps on a Monday whip up a good batch of the individual elements and store them in the refrigerator for tomorrow and the next couple days.

Remember that the Bircher muesli oats and chia seed pudding need to be made the night before.

I would imagine that if you’re making this little recipe for breakfast you’re probably not going to melt chocolate onto the glass jar, but it did look very cool for the photos :) and very tasty and rather fun eating it off the side of the jar ;)

_ Tropical Fruit Jars


Makes 4


½ cup chia seeds

¾ cup mango puree (blitz 1 mango in a blender)

1 cup fresh squeezed orange juice

1 teaspoon honey + extra for drizzling

3 kiwis (green or golden)

1½ cup rolled oats

1 can coconut milk

½ teaspoon ground cinnamon

½ teaspoon vanilla bean paste

1 cup fresh blueberries

2 frozen bananas

½ cup coconut water

1½ cup of your favourite muesli

Your favourite health snacks – mine are dried mango, pumpkin seed bars, goji berries, coconut shavings and fresh strawberries


The night before:

To make the chia seed pudding- mix the chia seeds with the mango puree, orange juice and honey and soak overnight. For the Bircher muesli- mix the oats with the coconut milk, vanilla and cinnamon and soak overnight.


In the morning:

Layer your jars with the chia seed pudding, followed by fresh kiwis and then the oats. Blitz the blueberries with the bananas and coconut water in a blender and pour over the oats. Top with your favourite crunchy muesli and if you feel like being a little decadent, top the jar with a few of your favourite healthy snacks and drizzle some extra honey.


Note: If you would like to create the chocolate crown around the jar, simply melt dark chocolate, dip the jar into the chocolate, allow to set slightly and then press some muesli into the chocolate and set in the refrigerator.
