Raspberry Chocolate Cake

Valentines Day Filled with Hearts and Chocolate Cake.

Raspberry chocolate cake

Have fun this Valentines Day and make something deliciously simple but also fun and colourful.

_ Raspberry Chocolate Cake


165g cake flour

50g cocoa powder

1/8 tsp baking soda

½ tsp baking powder

1/8 tsp salt

110g unsalted butter, room temperature

2 eggs

150ml buttermilk

1 cup raspberries, halved


Preheat the oven to 180’c. Line a baking sheet with baking paper. Sift the cake flour, cocoa powder, baking soda, baking powder and salt into a bowl of a standing mixer fitted with a paddle attachment and mix to combine. Add the butter and beat until the mixture resembles fine breadcrumbs.

Combine the eggs and buttermilk in a separate bowl and mix well. Add this mixture slowly to the cake mix until smooth and scraping down the sides, but be careful not to overmix.

Spread and smooth batter out onto the lined baking sheet. Lightly press the raspberries onto the surface. Place in the oven and bake for 10-12 mins or until cake tester comes out clean when inserted into the centre.

Allow to cool and enjoy with raspberry mousse.


Raspberry Mousse


1 cup raspberries

1 cup cream

2 gelatine sheets


Place the gelatine sheets in a little cold water and soften. Blitz the raspberries in a blender until smooth. Pass through a sieve to remove the seeds. Place in a small pot and heat slowly. Remove from the heat and add gelatine (squeezing out any excess water before adding). Mix until completely melted and then cool.

Whip the cream until soft peaks. Slowly fold in the raspberry puree and then refrigerate for 2hrs or until set.



I then whipped the mousse with a whisk to make it more of a frosting – you can simply serve as is).

I also served the cake with raspberry jelly hearts. I used the same method to make the mousse, I just didn’t add cream. I added ¼ cup coconut cream and set it in a tray.

I also serve it with a simple whipped chocolate ganache. All sorts of goodies - but the cake is delicious as is.
