Quick Bean and Lentil Curry Bunny Chow

A quick and easy vegetarian curry recipe that’s rich with flavour and won't take long at all to make.

_ Quick Bean and Lentil Curry Bunny Chow

Ingredients

30ml unsalted butter

30ml oil

1 cup chopped celery

1 cup chopped carrots

2 tablespoons hot curry powder

1 Knorr Tomato base dry cook-in-sauce

500ml vegetable stock

1 can coconut milk

1 can lentils, drained

2 cans broad beans, drained

1 white bread loaf, halved

 

Place the butter and oil into a medium-heated pot. Add the celery and carrot and cook until it softens and begins to caramelise slightly. Add the curry powder and tomato base dry cook-in-sauce followed by the vegetable stock and coconut milk and stir. Cook for 5 minutes until the sauce starts to thicken, then add the lentils and broad beans. Cook for a further 10 minutes. Hollow out the bread loaf halves, spoon the hot curry into the centre of the bread and serve immediately.

 

*I made my own bread loaves by using store-bought dough, leaving it to prove in a square loaf tin and then baking at 180’c for 30mins.
