One Pot Sweet Roasted Pumpkin and Curried Millet Salad

This only take 30 minutes to make and you just chuck everything into one pot to make the delicious sweet curry base of this salad.

_ One Pot Sweet Roasted Pumpkin and Curried Millet Salad

Ingredients

1 onion, roughly chopped

30ml vegetable oil

1 packet Knorr Naturally Tasty beef tagine

1 teaspoon medium curry powder

5 cups vegetable stock

1 cup millet

4 cups chopped pumpkin

1 cup dried peaches, roughly chopped

½ cup pumpkin seeds

½ cup parsley chopped

½ cup mint chopped

1 fresh red chilli, chopped

1 orange

 

Preheat the oven to 180’c. Lightly fry the onion in a large pot with the oil until soft. Add the contents of the Knorr naturally tasty beef tagine packet and 1 teaspoon of curry powder and stir. Add the millet, dried peaches and vegetable stock and cook for 20-25 minutes on a simmer until the millet is soft.

While the millet cooks, place the chopped pumpkin on an oven tray, drizzle with oil, season and roast for 20-25 minutes until soft.

To serve, mix the slightly cooled millet in a bowl with the roasted pumpkin, pumpkin seeds, parsley, mint, chilli and finish with a squeeze of fresh orange juice.
