Muesli Chia and Apple Waffles

Bircher Muesli Waffles - (crowd applauses!)

A bit if a play on bircher muesli, deconstructed and added to a waffle cause why not! There's this delicious crunchiness from the muesli and natural sweetness from the apple - heaven on a breakfast plate.

If you don't have a waffle iron, you can simply use the batter as you would to make pancakes.

_ Muesli Chia and Apple Waffles

Ingredients

1 cup cake flour

¼ cup castor sugar

1 teaspoon baking powder

1/4 teaspoon salt

¼ cup chia seeds

1 cup baked muesli

1 cup milk

1 large egg

50g unsalted butter, melted and cooled

 

To serve:

Bananas

Apples

Chia seeds

honey

 

To make the waffles, preheat the waffle iron. Add the cha seeds to the milk and set aside. Place the remaining dry ingredients into a bowl and mix to combine. Whisk the milk and chia seeds mixture, egg and butter together in a separate bowl. Make a well in in the centre of the dry ingredients and pour in the wet ingredients. Whisk to combine.

Lightly spray the waffle iron with non-stick spray and place 3 large spoons of batter into the centre of the iron, gently close the lid and cook until golden brown. Serve with bananas, apple slices and honey.
