Not Your Average Frozen Yoghurt
It's crazy how by simply altering the appearance of something quite expected into something a little unexpected how our interest is piqued. This is one of my favourite things to do!!
This is frozen yoghurt set into a tray to give you one large sheet that you can crack off pieces and eat as is. It's a fun idea for dessert with friends - it's healthy and will looks so cool.
Mixed Berry and Peach Yoghurt Bark
1 cup fresh raspberries
2 peaches, quartered
1 cup frozen mixed berries
1 ½ cups double cream yoghurt
1 tablespoon maple syrup or honey
½ lemon, juice
For the peach drizzle:
½ cup sieved icing sugar
peach food colouring (optional)
Line a baking tray with plastic wrap. (A trick I use to get it to stick is to pour a little water into the tray, swirl it around and pour it out again This helps the plastic adhere to the smooth surface of the tray).
Place the mixed berries, yoghurt and maple syrup into a blender and blitz until smooth. Pour the mixture into the lined baking tray and leave it to sit for a few moments to settle the bubbles. Place the fresh raspberries and peach quarters randomly on the surface of the yoghurt mixture and freeze for 3-4 hours. The mixture shouldn’t take long to freeze as it is only a thin layer. Serve with peach drizzle and berry coconut shavings (I bought these at a store, you can just use regular coconut shavings if you can’t find something similar).
To make the peach drizzle - puree the peach in the blender until smooth. You can add a little water if it gets stuck. Once pureed pass the mixture through a sieve and discard what is left in the sieve. Whisk the icing sugar and a drop of colouring (if using) over the peach juice and continue to whisk until evenly combined.
