The great thing about these little guys, is that you can use just about any colour and any filling you like depending on the occasion.

4 egg whites

1 cup caster sugar 

3 teaspoons cornflour

1 teaspoon white vinegar 

whipped cream and rose water, to serve

1 cup speckled eggs


Preheat oven to 120°C. Place the egg whites in the bowl of an electric mixer and beat until soft peaks form. Gradually add the sugar, beating well until the mixture is glossy. Sift the cornflour over, add the vinegar and fold through. 

Add food colouring of choice to the meringue and mix. Using a different colour, make stripes in a piping bag and then spoon the meringue into the piping bag.

Spray a muffin tin with non-stick spray and dust with icing sugar. Pipe nest shapes into each muffin cup.

Place in the oven and cook for 1 hour. Turn the oven off and allow the meringue to cool in the oven with the door slightly ajar.

To serve, top with whipped cream, speckled eggs and finish with a drizzle of melted white chocolate.
