Icy Gazpacho Popsicles

Not Your Average Popsicle!!

These are icy cold gazpacho popsicles - yup GAZPACHO! Drizzled with extra virgin olive oil and finished with a tiny crack of black pepper.

This gazpacho is raw - so you're going to want to use the freshest ingredients you can find.

_ Icy Gazpacho Popsicles


4 tomatoes, chopped

1 red pepper, chopped

1 garlic clove

¼ cucumber, chopped

1 small handful parsley

¼ cup red wine vinegar

¼ cup extra virgin olive oil

salt and pepper to taste

1 chilli, finely chopped (optional)


Place all the ingredients in a blender and blitz until smooth. Pour the mixture into popsicle molds and freeze overnight. Enjoy on a hot summer’s day as a snack or icy starter to an alfresco meal.
