365 Days A Year Ribs
You sure can eat ribs all year round - whether the sun is shining or the winter chill is biting - ribs always offer a delicious sense of comfort and joy.
I think most people don’t actually realize how easy it is to make your own ribs at home. I think these are one of those things you should rather make than buy. All you need is your favorite spice rub and a few of your favorite sauces. If you can’t find cold brew coffee then simply add a chilled espresso to the mix - its definitely not the same thing but will absolutely add the flavor you’re looking for.
Coffee Marinated Pork Ribs
1/2 cup spice rub (your favourite - mine is a BBQ meat rub)
2 racks of pork ribs
2 cloves garlic, grated
2 limes, zest + juice
1 thumb-sized ginger, grated
1/2 cup tomato sauce (ketchup)
1/2 cup cold brew coffee
1/4 cup sriracha sauce
1/4 cup hoisin sauce
Preheat the oven to 150’c. Line a baking tray with foil and place a cooling rack on top. Lay the ribs on top of the rack in a single layer. Drizzle over a generous layer of olive oil and rub in the spices over the top and bottom of the ribs. Cover with foil and roast in the oven for 2 1/2 hours until the meat is tender. Remove from the oven and allow to cool.
While the ribs cool make the marinade. Mix all the ingredients together, place the ribs in a dish and pour over the marinade, or place in a resealable bag, and marinade overnight.
To finish the ribs - preheat the oven to your highest grill setting. Grill for 10-15 minutes in the oven turning occasionally and basting constantly with the marinade. Alternatively place on the braai or barbecue.
