Banoffee Layer Cake

Banana Heaven

The combination of banana, caramel, and cream is simply magic! I made two layers of banana bread and then sandwiched them together with caramel and whipped cream.




_ Banoffee Layer Cake


Makes 1 banana bread layer

So you will need to make 2 of these:


50g unsalted butter

60g soft brown sugar (demerara sugar)

2 small bananas, for topping

1 eggs 

100g caster sugar 

½ teaspoon vanilla extract 

1 small (very ripe) bananas, mashed

60g almond flour

1/2 teaspoon baking powder 

75g cake flour 

75g unsalted butter, melted


Preheat oven to 180°C and grease a medium rectangular baking tin. Heat the butter and soft brown sugar in a small saucepan over low heat, stir constantly until the butter has melted. Continue to cook for another minute and then pour into baking tin.

Cut the 2 small bananas into 3 lengthways and place in the baking tin onto the caramel. Set aside. 

Using an electric mixer (the mixture is not enough for a standing mixer), beat eggs and caster sugar for 10 minutes until light and pale. Add the vanilla extract and mashed banana. Sift the almond flour, baking powder and flour and using a whisk mix well. Add the dry ingredients to the egg mixture and mix gently until just combined. Lastly stir in the melted butter until incorporated.

Pour the batter into the cake tin and bake for 25-30 mins or until a skewer is inserted and comes out clean. Allow to stand for 5 minutes before turning out onto a cooling rack.

Allow cake to completely cool before assembling.

To assemble:

Smear a layer of caramel onto one half and top with whipped cream. Then place the other banana bread layer on top and serve with 2 scoops of ice cream.
