My Guilty Little Pleasure
I've had banana cream pie once in New York (not from Magnolia bakery) and once from Magnolia Bakery in Dubai. I did the banana splits and jumped for joy - it was delicious!!!
Simple ingredients assembled in heavenly layers of custard, bananas, biscuit and cream.
I thought I would add my fav little thing and that's bruleed banana's. So simple but oh so faux-fancy!

½ cup sugar
2 tablespoons cornflour
pinch of salt
1 ½ cup full cream milk
½ vanilla pod, deseeded and scraped
8 ginger biscuits
2 bananas, sliced
Place the first 3 ingredients in a small pot and whisk to combine. Then add the milk and whisk well. Place the pot on a medium heat and cook until thickened, stirring continuously. Remove from the heat. Take a little of the liquid and temper the eggs with it. Pour the egg mixture into the hot milk mixture and whisk well.
Return to the heat and cook slowly until thickened. Make sure you stir continuously so it doesn’t burn on the bottom.
Add the vanilla and then pour into a bowl, cover and refrigerate for 15 minutes to cool slightly.
Pour a little of the cooled custard mixture into your molds, then top with slices of banana. Fill the rest of the molds with the custard mixture and return to the refrigerator to chill overnight.
To eat simply top with fresh whipped cream, more fresh banana and enjoy.
