Ingredients

RECIPE NO1... Apple Bircher Muesli

Serves 2

 

You will need:

- 1 cup oats

- 1/4 cup chia seeds

- 3/4 cup milk roughly

- 1-3 tbsp yoghurt (up to you how much)

- 1 apple grated

- 1 tsp cinnamon

 

Combine oats, chia seeds, milk, yoghurt in a tuppaware (you might need more milk depending on how soft you like it). Soak overnight. Grate apple into the oats in the morning and sprinkle over some cinnamon & honey if you like it sweeter.

 

RECIPE 2- Apple Potato Rosti

Lunch or light dinner Serves 2

 - 1 apple grated

- 2 large potatoes grated

- 1 egg white

- pepper

- salt

 

Squeeze out excess liquid from apples and potatoes. Combine the ingredients, form rosti’s and fry in a little butter or bake at 180’c for 15mins. I ate mine with creme fraiche I had in the fridge, a seed mix my sis made me & some EVOO. You could also eat them with grated cheese - yum!

 

RECIPE 3 - Apple Grilled Cheese

Lunch idea Serves 2

- 2 bun

- 2 tbsp mayo

- 1 apple sliced

- 1 cup cheddar cheese

- butter

 

Spread buns with mayo. Top with grilled cheese and apple slices. Butter the outside of the buns and fry in a medium heat pan until golden and cheese melted. Pop the lid on the pan - it helps heat the sandwich and melt the cheese.

 

RECIPE 4 - Apple & Tuna Sarmie

Lunch idea Makes 2

- 1 can tuna

- 1 tbsp red onion, finely chopped

- 1 apple finely chopped

- 2 tbsp mayo

 

Mix everything together and serve on fresh soft white bread :)
